Gayo Coffee: A Buyer's Guide to Aceh's Highland Arabica

Gayo coffee is arabica grown in the Gayo Highlands of Aceh province, on the northern tip of Sumatra, Indonesia. It is one of Indonesia's best-known origins and is protected as a Geographical Indication under the name Kopi Arabika Gayo.

Where is Gayo coffee grown?

Most Gayo arabica comes from the regencies of Central Aceh (Aceh Tengah) and Bener Meriah, around Lake Laut Tawar and the town of Takengon. Farms typically sit between roughly 1,200 and 1,600+ meters above sea level. Highland Urban Nusantara (HUN) farms in Central Aceh and Bener Meriah at 1,200–1,700 m.

Production is dominated by smallholders, usually growing coffee under shade trees. The cool climate slows cherry maturation, which helps develop denser beans and more complex flavor.

Varieties

Gayo lots are often a mix of locally adapted varieties: Ateng, Tim Tim (Timor Hybrid), Gayo 1, Gayo 2, Borbor, and Abyssinia. Many farms grow several of them side by side, so single-farm lots can taste quite different from one another.

Processing and flavor

  • Wet-hulled (giling basah) — the classic Sumatran process: heavy body, low acidity, notes of spice, cedar and dark chocolate.
  • Fully washed — cleaner and brighter, with clearer sweetness and fruit acidity.
  • Natural — dried in the cherry; sweeter, fruit-forward cups.
  • Extended fermentation ("wine process") — intense, winey fruit notes for specialty menus.

Why roasters buy Gayo coffee

  • A full body that works well in espresso blends and milk drinks.
  • A wide range of process options from a single origin.
  • Specialty-grade potential: well-sorted, red-cherry-picked lots regularly cup above 80 points.

Sourcing Gayo coffee

When buying green beans, ask for the harvest year, process, moisture content (typically around 10–12.5%), screen size, defect count and a cupping score — and always cup a pre-shipment sample. Our guide to choosing a Gayo coffee supplier covers this in detail.
